Snack Staple

There are a couple of snacks that we have at our tailgate (affectionately named "The Bittieboose" after a spin off of the "Cock-a-booses" that Columbia is known for!) almost no matter what. This fabulous, EASY dip is one of them!

When I first heard my friends talking about it, I thought it was called "Norse Dip" i.e. with some relation to the Norse countries (Denmark, Finland, Iceland, Norway and Sweden) or someone's Norse relatives. I was VERY wrong.

The name is actually Knorr's Dip named after the Knorr's vegetable mix that you find in dried packets at the grocery store!!

Anyway, I've grown to love Knorr's Dip so much that I actually keep a Pyrex dish of it full at my house for weekly snacking!

When I say that this dip is easy, I mean it's so easy that easy is actually in it's name officially on the website! It's shown to eat with veggies, but thanks to Momma H (one of our tailgate Moms) I've learned that it's absolutely best with Fritos Scoops!

INGREDIENTS
1 package Knorr Vegetable recipe mix
1/2 cup Mayonnaise
1 container (16 oz.) sour cream

DIRECTIONS
Combine all ingredients in medium bowl. Cover and chill 2 hours to blend flavors.
Stir before serving. Serve with your favorite dippers.

I used Hellman's Mayonnaise and Breakstone's Sour Cream but that's solely because I had them both in my fridge! The longer that you let this dip sit, the better it gets! I couldn't help myself last night when I made it so I started dipping immediately, but it's definitely better the next day or overnight!

ESPN College Gameday

The long-awaited OFFICIAL announcement was made a few days ago by ESPN and College GameDay! They are en route to Columbia, SC!

If you live under a rock (or just aren't of the football persuasion) you wouldn't know that the USC-UGA game will be among the biggest, most important football games that us current Gamecocks will ever attend in our Gamecock careers.

This ESPN College GameDay marks the 5th time that they will be in GAMECOCK COUNTRY!

I say this every year because every year there's a BIG game that somehow gets topped the next year, and I swore it wouldn't happen this season, but NO, the Gamecocks are at it again:
Freshman year: USC vs. Ole Miss (biggest upset we'd had until...)
Sophomore year: USC vs. Alabama (officially crushed #1)
Junior year: USC vs. Clemson (I've never been a part of a more energized student section)
Senior year: USC vs. UGA

I love that this series of different games has also been a different opponent each year. Traditionally, we've played UGA much earlier in the season, but I am so excited!

There will be so much going on during the day and weekend and I think I can speak for most Gamecocks in saying that we are SO ready for it to already be SATURDAY! Too much waiting and anticipating (considering we've been waiting for this since oh, last season ended...) to even believe!

Tailgate City, USA: The Spread

For the next few days, I'm kicking off this Tailgate City series!

Thanks to Swoozie's, we had a FULL tailgate spread over the weekend. The spread is the most important part to your tailgate. The spread is any and everything including tables, food, plates, cups, platters and everything in between!
Swoozie's sent us SO much fun Gamecock stuff! We had plenty to use, share, and keep using for the rest of the season!
Before we set up our official spread, I was playing around as we unpacked the car. Here's the best Heisman I could come up with with that HUGE Gamecock burlap football!
Not only did we have an awesome, full spread, but it was ALL Gamecock Gameday themed!
These buckets were a HUGE hit along with the Gamecock 1801 platters! Since it was LBP's birthday, I got some cupcakes that people enjoyed munching on all day long!
Ever seen a redneck wine glass? Our whole crew was sporting them all day!
Swoozie's even included a personalized one for me!

This was DEFINITELY the most fun I've ever had at a tailgate! I love being a Swoozie's Sweetheart and I can't wait to bring y'all more fun things as a partner with them!

MAJOR thanks to Swoozie's, Ashley with Swoozie's and the entire crew for helping me host, organize, and work our entire tailgate! Happy tailgate season y'all!!

The Beginning of the End...


IT'S OFF TO GAME NUMBER ONE OF SENIOR YEAR WE GO!

I can't wait to cheer with all my fellow Gamecocks, put on my black dress, stand up for almost 4 hours, let half the stadium split between GAME and COCKS, and kick off senior year the right way!!

A Heart Divided: Dating the Enemy

I couldn't be more excited to finally share with y'all that I am to a contributor for SouthernLeague Magazine!!

The big debut was yesterday and my article was featured as a Lifestyle piece perfect for any SEC belle!

When Christie of Gridiron Belles asked me if I wanted to be a part of the project, I was so excited and couldn't wait to get on board! She asked me to write a piece on what happens when you date your schools enemy! 

A major hotbed of rivalry activity happens to be right in my backyard between USC and Clemson so I have a had plenty of friends and friends of friends date the enemy! My article includes advice for all kinds of different situations that you might run into as a rivalry couple including Gamedays, meeting friends and the all important head-to-head Gameday!

Outfit Of The Day: Gameday Does Workday

June 6



If y'all remember, I got this dress originally to wear as a Gameday dress. It's from Marshall's and is an AWESOME DRESS. I love it!

Now you get to play where's Waldo for a second, and if you can find me, you can actually see my wearing this dress! (Look in the top right 1/4-ish of the picture...) Marcus Lattimore was scoring a touchdown and this gem of a photo was actually in The State newspaper. (The things I did to try to get this online...getting photos from the paper are VERY hard to do!)

I'm wearing it to work today because it's such a versatile dress. It's really long for a dress (and that's saying a lot on me!) and is knit which is great for summer in South Carolina! I have a walk from my car to the building that's only a few hundred feet, but I've definitely worked up a sweat going to and fro! I'm excited to wear this dress to work, and even more excited that it can do double duty as a Gameday dress AS WELL AS a workday dress! Win-win if I ever heard one!!

My Next Roadtrip: Clemson, SC

While I will be bringing all the Gamecock pride that I can handle, I'm heading off to Cleeeeempson, SC this weekend! 
I'll be heading to the backwoods to go visit this wonderful Clemson Tiger (there are a few that I like...wouldjabelieveit?) for the weekend! Kate came to visit me for the Carolina/Clemson game (we all know how that turned out...) and we had a great time! We'll be a house divided, but I'm really looking forward to my next roadtrip! Y'all know how I love a good roadtrip and with that, roadtrip playlist! 

I've never been to Clemson, so I'm looking forward to it! I know I have some fabulous, preppy Tigers out there, so what are some of the must-do's while there? Any tips or suggestions?

I have a big ol' CLEMSON written in my planner, and I even added a little tiger paw right next to it--in orange too! Again, wouldjabelieveit?I do have to say, GO GAMECOCKS, but I'm pumped to be headed on my next trip!

Weekly Gratitude

So behind on this!! Yikes! Time to refocus and get ready for the week ahead!

1. I am thankful for YOUR SOUTH CAROLINA GAMECOCKS! The Capital One Bowl was ridiculously fun once the Gamecocks realized it was a Bowl game and could seriously change their collegiate careers, 2011 season and fan feelings all with one game. We just finished an 11-win season for the FIRST TIME IN SCHOOL HISTORY!
2. I am thankful for the wonderful break that Christmas provided me. It was restful, relaxing (most times), and a much needed month off. 
3. (With that said...) I am thankful that I get to go back to school on Thursday. Which is the day after tomorrow. Cue packing frenzy!
4. I am thankful that my birthday is on SUNDAY! I've been counting down since, oh, January 9, 2011. 21 club here I come!
5. I am thankful for the WiFi I'm currently using in the Orlando airport. I wish all airports provided you with free service like this. It's such a treat to be able to use you computer for a few minutes without having to pay ridiculous fees like $9.95 for 24 hours. I hope I never have to be in an airport for 24 hours!
6. I am thankful that it has been a relatively mild winter. I really really hate the cold! Like really really hate it. I was so uncomfortable in NYC when it was windy and freezing. This mild winter has been such a blessing!

7. I am thankful for the FAAAAABulous new Essie color I tried out: Fruit Sangria! Love it!
8. I am thankful that I am starting second semester junior year. I can't believe it, but I am. It is WILD! Now on the lookout for internships for the summer. I have a list of a few that I'd like to apply for so we'll see where it takes us! (Shameless self plug: anyone in Charleston looking for a Marketing/PR/social media intern?)
9. I am thankful for Southwest Airlines and the ease with which I've traveled this break. It was easy to book and both ways we were on time! It makes such a big difference when traveling is easy.
10. I am thankful that I am about to board my flight! Hopefully I'm home around noon!

Roadtrippin'

The rest of my break is pretty much scheduled and set! With the exception of 3 days until I go back to school, I will be in states other than MD! Today we leave to go see my Mom's side of the family in New York. We'll be there today and the next three days.
This picture was taken a million years ago, but this is the older half of the cousins that we'll be seeing!

I have about half of the day on the 30th, all of the 31st and then the next day, at 7am I leave for Orlando for the Capital One Bowl to cheer on the Carolina Gamecocks!
Miss Colleen and I will be some of the Gamecock fans traveling to see the Gamecocks in their last game of the 2011 season! I can't wait to see them for the last time as a junior!!

I get back around noon on the 3rd, and I will be leaving for school most likely on the 5th or 6th (can you believe we're already talking about JANUARY!?) to head back down to South Carolina! 
Then I'll be so lucky as to be reunited with THIS crew for my big day shortly after that!! I can't wait to see them again and celebrate my birthday!

When does everyone else go back to school? I'm definitely on the earlier side of things!!

Home! Home! Home!


This is my hometown. It is crab pots, Old Bay, plebes, flip flops, American flags and hot dogs in the Summer. It is boat shows, the most magnificent trees turning, and Indian Summer, knee socks, Navy Football and colonial colors in the Fall. It is chilly, frozen anchors, quilted coats, Tall Jamaicans, heat all the way turned up and high school basketball in the Winter. It is shorts, boat shoes, the annual Sock Burning, .05K, and lacrosse in the Spring.

It is Annapolis, MD.

I am so unbelievably, ridiculously thankful to be home for a few weeks!

A House Divided


My sister is in town for the USC/Auburn game this weekend!

She very may well be an Auburn Tiger in a few months, so this weekend we are quite the house divided! While she'll be donning her garnet and black garb this weekend, I think she's probably pulling for the Auburn Tigers (thankfully it's not those other Tigers that we will NOT be naming!) just this one game!

I am so excited for our little mini-competition and can't wait to have a great day at the game tomorrow!

Goodbye My Lover, Goodbye My Friend

As I begin to sing the beginning of James Blunt's song, "Goodbye My Lover" it has become a time to say goodbye to a dear friend of mine.

If y'all will remember, a few weeks ago I wrote Boo Boo about an accident I had on campus. Unfortunately I wrecked a pair of shoes in the process:

It has come HIGH time that I dispose of these Platinum Jacks, but it is not easy let me tell you. I wrote this essay for Jack Rogers blog a few months back but I'm going to repost it for y'all to read:

What item takes you from your first “real” job, to two high school proms to graduation ceremonies to college orientation and move in? Maybe a camera, lucky key chain, or maybe even your parents. For me it was a beloved pair of shoes.  

It all started with my first job working in high school. In Annapolis, Maryland, Jack Rogers are a shoe-must, so I fell in line. I decided among the colors at our store, gold, bone and white, silver and then I knew what I wanted: my “Platinum Jacks” as they’ve fondly been nicknamed. Using one of the first “big-girl” paychecks that I ever got, I happily purchased my first pair of Jack Rogers, a pristine Platinum pair, size 9.5 had Katie written all over them. At the time I was a rising junior in high school.  I tried to break them in, wondering how some women wore these shoes 24/7 in the summer. I later developed my seasonal 3-circle blister synonymous with spring, flowers, and Jack season.  
In the spring of junior year, there is one event at my high school that every girl looks forward to and every boy looks away from: the prom. I had my dress picked out from August. Pink and green with swirls and a sweetheart halter neckline, with a goldy-silvery connector. I had a slight problem, with the mixed metal ring, what shoes did I wear? Prom-blem solved with my trusty platinum Jacks. I wore them to my senior prom and after prom as well, because lucky for 6’1’’ me, my Jacks didn’t make me tower over my date.

After senior year, about a month after graduation I headed down to Columbia, SC for only the second time in my life for college orientation at the University of South Carolina. I brought numerous outfit options but only 1 pair of shoes because with all my clothes, I was a little strapped for room. What did I bring with me knowing they’d match whatever I wore? My platinum Jacks, naturally. By this time, my collection consisted of black, gold and platinum but why fix what’s not broken, right?

Fast-forward to August 2009. Our big, blue Honda Pilot is packed to the brim with brand new bedding, desk supplies, all the clothes I could fit, lights, bed lifters, a laundry basket (and ample amounts of detergent), and my little family. We were all in comfy clothes necessary for lugging all my boxes and loads of stuff up 14 (yes, 14) flights of stairs to my new residence hall room. Brimming with excitement and nerves, my dear old dad moved most of the stuff. I had a Gamecocks t-shirt, white shorts and my platinum Jacks each and every trip up the stairs on my first day.

When you go to an SEC school, college Gameday is more of a holiday than anything else. Girls dress up, for us it’s all about the LBD. We all don our little black dresses, big sunglasses, and either Jack Rogers or cowboy boots. Welcome to the South y’all!  I’ll remember my first gameday. USC was playing Florida Atlantic University and I wore my first black dress to a game. My dad thought this was ridiculous. My roommate and I were so excited and copiously considered our footwear choices: comfort, could get a little dirty, style, and obviously it would have to match. She went with flip flops, but I knew only one pair of shoes could get me to my first big college football game. My Jacks, now about three years old, were perfectly worn in, plus it was early September so I was still totally used to wearing them from living in them over the summer. My Jacks made it through the entire season, although not bringing the Gamecocks as much luck as we would have hoped. My platinum Jacks also made it to the USC-Alabama game of 2010, that’s when they were lucky! Ask any USC student about that game and we can talk your ear off about how great it was and how it helped with the decision of the number one recruit but really, my student body owes it to my fabulous platinum Jacks that got us that W. 

It’s clear that my shoe of choice for the past 5 years has been my platinum Jacks. Through the years, my friends have acquired their own pairs, I’ve accrued 2 more pairs: white and silver to add to my collection. I now have 5 pairs that work a decent rotation, but it’s my platinum ones that have made it to most of the important events of my college life. They got me through high school milestones and I look forward to see where they’re going to take me with the rest of college. If these shoes could talk…

Gamecocks vs. UGA

Today is the second game for the Gamecocks and they are taking on the Georgia Dawgs AT Georgia!

Tons of my friends and classmates are headed down to Athens to cheer the Gamecocks on to victory and bring it back home to hopefully continue it against Navy! This game seemed pretty crucial for both teams and people EVERYWHERE were making all kinds of predictions about the outcome of the game! I will be watching the game and religiously following the tweets everyone has to say about the game! Let's go Gamecocks!!

Kick off is at 4:30 and I can't wait to tune in! GO GAMECOCKS!

TODAY IS THE DAY!

YOUR Carolina Gamecocks are taking on the East Carolina University Pirates today for our 2011-2012 season opener! The game is in Charlotte, NC in the Bank of America stadium!

I will be watching this game the MINUTE it turns on in my black Gameday dress and I cannot wait!

SEC football is finally upon us all once again and I could not be happier!

Outfit of the Day: Double Duty

I wore this outfit yesterday! I was at work for a little to fill out some new-hire paperwork, had class, and had an Ambassador function last night! We're starting our Recruitment process for our new cohort of Ambassadors and we couldn't be more excited! Last night got us SO excited (complete with a group version of Rock, Paper, Scissors that I'm so game for playing again) to bring in the new crop and start giving tours again!

I had two days worth of outfits squished into one! I had my class/work/run errands outfit that I was in until about 6 and then my visitor center/University Ambassadors/tour guide outfit that I wear (a different version of) once a week, for football recruitment, and special events that the University hold that require the aid of student volunteers!

I get a lot of questions about what I typically wear to give tours in so the second outfit is common. We have pretty easy rules to follow: it has to be garnet and black, have Carolina on it somewhere and bottoms must be fingertip length or longer. You also have to wear shoes that you're comfortable giving tours in! This is a pretty common outfit for me to wear until it starts to get colder out here!

Weekly Gratitude


1. I am thankful for Bodypump. I did it Sunday night and it was a great reality check into how out of shape  (my arms especially) I am. I am making a commitment into going 3 times a week to get my bootay in shape!
2. I am thankful today is my first tour! I am SO excited to get back into the swing of things! This week will be great to finally hit my stride and get into a real rhythm!
3. I am thankful to be working! I am lucky enough to have gotten a job that I am already loving here at school! The ladies I work with have really taken me under their wings and teaching me things I haven't quite learned about Columbia yet!!
4. I am thankful that my parents are coming to visit me soon for the Navy v. USC home opener game! I got a little homesick over the weekend for   a little while and I can't wait to see them!
5. I am thankful to be reunited with my fabulous roommates! It has been so much fun to see them and hang out with them. And I'm pumped we're friends with our neighbors--it's like having 5 roommates instead of 2!
6. I am thankful that it is going to stay summer here for much longer. At first I though I'd hate it being so hot here, but no, this weather rules. 
7. I am thankful I am still staying in touch with my friends from home, the summer, and even last year. Y'all have no idea how much it means to me and how grounded it keeps me. I love each and every one of you!
8. I am thankful that I have FINALLY found some decor for my room!!!!!! I have been on the lookout for something to hang on the walls and I have finally found something that I like and fits me so well! I am getting 4 11x14 posters BUT that's the only detail I am going to give y'all for now! Oh yeah, and it'll arrive with the arrival of my next paycheck! I've desperately needed something to hang to make it feel a little more like me, so this will be the perfect touch!
9. I am thankful for my calendar and agendas that were both organized yesterday!! The new calendar is hung appropriately and color coded for each event coming up!
10. I am thankful that CAROLINA FOOTBALL is right around the corner! We are 12 days away from our season opener!!

Weekly Gratitude


1. I am thankful today is Saturday because thanks to Rebecca Black, we know that Sunday comes after Saturday and I get to leave on SUNDAY!
2. I am thankful that my wonderful, loving parents took me back this summer. I feel like I was so busy I hardly got to take an extra breath, but they put up with me, school, a crazy work schedule and all kinds of girl drama.
3. I am thankful that my sister and I got to spend another summer together. Everything is SO completely different than it was just a year ago and I'm glad I get to spend some extra time with her because before we know it she'll be heading off to college!
4. I am thankful that all my friends are literally going to be within a spitting distance of me in a matter of hours. I plan on seeing everyone within my first week back. Mark. My. Words. Y'all. (Read: you'll get lots of hugs and maybe tears and lots of jumping!)
5. I am thankful for the close friends I have here at home. They have filled voids, made me laugh, helped me through crazy situations this summer, and most of all, listened to me and my craziness. All of it.
6. I am thankful today is my last day of work at the Pink Crab (but I will miss it tons!). I have had the best summer ever working this year, loading up hours! I will miss this place SO MUCH and I'm not sure what I'll do without the lovely ladies that I get to share a store with. I have the world's best boss, a great staff, and fun clothes to sell to cheery people. Oh yeah, and we have a sick view. Does it get better than that?
7. I am thankful for all the packing I've been doing. In the words of my smart Daddyo, "Katie, you can't pull an all nighter Saturday and expect to drive all day Sunday." He's a very smart man.
8. I am thankful for Amazon Prime. I've been looking up textbook prices and it's consistently saving me between 9-32% on every book. And giving me free shipping. But like I tweeted, big girl textbooks mean big girl prices. YIKES! (Thanks Dad!)
9. I am thankful to be going back to a school that I love. Bring me Gourmet Shop chicken salad, sweeeeeeet tea, Bojangles, Cocky, Publix, the VC and my UA family, sweltering heat, Williams-Brice, my little pink and green room, Wal Mart, 1704, Eric San Jose, football, Rosewood Drive, and YOUR CAROLINA GAMECOCKS!
10. I am thankful for Little, my car. It got a lot of work done this week that we weren't expecting and in the words of Jessie James "is lookin' fresh and brand new" for our drive back down South. (Dearest Little, sorry you have to get covered in disgusting bugs in North Carolina. I've never really understood that phenomenon, but it happens trip in and trip out.)
